    Cauliflower Rice

    Light and fluffy Cauliflower Rice made in only 15 minutes! A terrific low-carb, grain-free alternative to regular rice.

    About This Recipe

    After making buffalo cauliflower wings earlier this week, I was left with an extra head of cauliflower. And since I've already eaten so much indulgent food this season, I decided something healthier was in order- cue cauliflower rice. Plus, it's my wife's office Christmas party this week, so I'm gonna be getting my fair share of unhealthy-holiday-junk food.

    Cauliflower rice is typically made as a low-carb replacement for rice, and the texture is actually quite similar. But unlike rice, it does not take 30 minutes to make- it's way quicker! Once you process the cauliflower in a food processor, all you do is stir-fry it for about 3-5 minutes. That's why I only have two photos in the instructions section of this blog post today... cause it's really that easy.

    Key Ingredients

    Cauliflower: You'll need one medium head of cauliflower. The cauliflower I used today was actually nearing the end of its shelf life- it had one mushy part, and the outside had oxidized quite a bit. I just trimmed those parts off with a paring knife, and it was fine.

    Olive oil: You can really use any type of oil.

    Garlic: For savory depth.

    Freshly chopped herbs: Add your favorite herbs here. Some of my favorite choices are green onion, parsley, and cilantro.

    Lemon juice: Optional, for brightness. If you use cilantro, I recommend using lime here instead.

    Salt and pepper: To taste.

    STEP 1: Chop the cauliflower into large pieces. Pulse in a food processor until it looks like the texture of rice- be careful not to overprocess, otherwise the rice will be mushy.

    STEP 2: Heat the olive oil in a large skillet over high heat. Add the cauliflower, garlic, and chopped herbs. Sautรฉ for 3-5 minutes until cooked through.

    STEP 3: Remove from the heat and drizzle with lemon juice. Season with salt and pepper to taste.

    • 1 medium head cauliflower

    • 2 cloves garlic (minced)
    • ยพ cup freshly chopped herbs (green onion, parsley, or cilantro)
    • 1 tablespoon lemon juice
    • salt and pepper (to taste)
