Easy Cauliflower Rice

This quick cauliflower rice is simple and delicious. It's light, fluffy, low-carb, and comes together in just 15 minutes. Tastes even better than rice!

Ingredients
  

  • 1 medium head cauliflower
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • ¾ cup freshly chopped herbs (green onion, parsley, or cilantro)
  • 1 tablespoon lemon juice
  • salt and pepper (to taste)

Instructions
 

  • Chop the cauliflower into large pieces. Pulse in a food processor until it looks like the texture of rice- be careful not to overprocess, otherwise the rice will be mushy.
  • Heat the olive oil in a large skillet over high heat. Add the cauliflower, garlic, and chopped herbs. Saute for 3-5 minutes until cooked through.
  • Remove from the heat and drizzle with lemon juice. Season with salt and pepper to taste.
