Chop the cauliflower into large pieces. Pulse in a food processor until it looks like the texture of rice- be careful not to overprocess, otherwise the rice will be mushy.
Heat the olive oil in a large skillet over high heat. Add the cauliflower, garlic, and chopped herbs. Saute for 3-5 minutes until cooked through.
Remove from the heat and drizzle with lemon juice. Season with salt and pepper to taste.
