This keto waffle recipe is a great way to start your morning if you're on a keto diet. It has over 17g of protein and only 3g of net carbs per waffle. And unlike other recipes, this one actually tastes good! I've tried a few keto waffle recipes in the past, but they've always been overly eggy tasting and kind of limp. These ones have the best texture in my opinion.
And to make matters even better, these are incredibly easy to make. Just add all the ingredients to a blender and blend for 30 seconds until smooth. After that, all you do is fry them in the skillet. I like to get two pans going at once so I can cook multiple pancakes at the same time.
I typically serve these with a pat of melted butter and that's it.
Key Ingredients

Cottage cheese: The base of these pancakes is made with cottage cheese. I love cottage cheese because they are so high in protein, over 13g per serving (ยฝ cup).
Eggs: I used 2 eggs for this recipe. If for some reason you're looking to reduce the fat and increase the protein further, you can also substitute the eggs for egg whites. 1 egg can be substituted for 50g of egg whites or 3 tablespoons of egg whites.
Almond flour: I like the super fine almond flour from Costco. It's a good price, and I have found it lasts longer than other almond flours.
Melted butter: You can also use coconut oil.
Baking powder: For leavening.
Salt & vanilla extract: For flavor.

STEP 1: Add all the ingredients to a blender.

STEP 2: Blend until smooth.

STEP 3: Grease the waffle iron generously with oil. Scoop about 1 cup of batter into the waffle iron.

Instructions
- Start preheating your waffle iron.
- Add all the ingredients to a blender or food processor. Blend until smooth.
- Grease the waffle iron generously with oil.
- Scoop about 1 cup of the batter into the waffle iron (don't overfill). Close the waffle iron and cook until golden brown and crisp. Remove, then repeat with the remaining batter.

It's 3:30am and I was craving something non-meat and veggies but keto and remembered the days that pancakes/waffles or cereal was my middle-of-the-night go-to.
