I feel like in my past life, I was probably a Midwestern mom. I'm in love with basically every dish I've tried from that area, especially their dessert salads. Most people I talk to about these salads are always appalled by the idea, but I don't know.... I just love how they taste. I mean, it's usually sweetened cream with some sort of fruit, marshmallows, and nuts. How can anyone dislike that? I think most people just like being haters.
This strawberry fluff has to be the best dessert salad I've tried so far. It's loaded with fresh strawberries, canned pineapples, and of course, my favorite Cool Whip. Strawberries have been my favorite fruit since I was a kid, so this was right up my alley. There's also a package of strawberry Jell-O, which amplifies the strawberry flavor even more, so if you're a strawberry lover, please try this recipe!
Key Ingredients

Cool Whip: You don't have to use name-brand Cool Whip; you can use any frozen whipped topping. Make sure to defrost it for 4 hours beforehand!
Strawberry gelatin: We aren't actually making Jell-O, we're just mixing it into the Cool Whip to give it strawberry flavor.
Vanilla instant pudding: This isn't called for in all strawberry fluff recipes, but having tried it with and without, I much prefer it with it. The vanilla pudding thickens up the Cool Whip a bit more and adds delicious vanilla flavor.
Mini marshmallows: I used plain marshmallows, but you can use flavored ones if you want.
Strawberries: I prefer using fresh strawberries, but you can use frozen as well. Just make sure to thaw them and drain any excess water that seeps out during defrosting.
Crushed pineapple: Make sure you get crushed pineapple and not tidbits! Crushed pineapples give the strawberry fluff a better texture.
Instructions

STEP 1: In a medium bowl, whisk the strawberry Jell-O with 1 cup of boiling water until dissolved. Stir in 1 cup of ice cubes until melted (you can also use cold water, but it will take longer to thicken in the next step).

STEP 2: Whisk in the vanilla pudding mix, then chill for 15 minutes until thickened. It should look like a thick pudding.

STEP 3: Fold in the Cool Whip.

STEP 4: Gently fold in the marshmallows, strawberries, and pineapple. Chill until ready to serve.

- 1 (3.4-ounce) box vanilla pudding mix
- 1 (8-ounce) tub Cool Whip (thawed)
- 2 cups chopped strawberries
- 1 cup mini marshmallows
- 1 (8-ounce) can crushed pineapple (drained)
Instructions
- In a medium bowl, whisk the strawberry Jell-O with 1 cup of boiling water until dissolved. Stir in 1 cup of ice cubes until melted (you can also use cold water, but it will take longer to thicken in the next step).
