    About This Recipe

Also known as orange creamsicle salad!

This orange fluff salad is perfect for any time of the year, whether you're heading to a summer potluck or you need a dessert for your holiday table. The fluffy Cool Whip, mandarin oranges, and Jell-O make it sweet and fruity, while the cottage cheese adds a bit of heartiness that makes it more satisfying than your typical dessert salad. It's such an interesting mix of flavors that come together surprisingly well.

I don't know why, but I LOVE this dessert. To most people, it just doesn't make sense, but once you try it, it's so good. When I was a kid, orange creamsicles were my favorite type of popsicle, so that's probably why I love them so much.

One funny thing about this dessert is that no one ever realizes there is cottage cheese in it. It's really funny to see people's reactions when they ask what the little soft pieces are, and I tell them it's cottage cheese. The citrus and Jell-O hide it really well. It's a great recipe if you're looking to add some extra protein to your diet, but you still want something sweet!

    Key Ingredients

    ingredients prepped in bowls.

Frozen whipped topping: Remember to defrost this at least 4 hours beforehand! Nothing worse than starting this recipe and realizing you forgot to defrost the Cool Whip, and then having to wait another 4 hours.

Jell-O: You'll need one small 3-ounce box. We aren't actually going to make Jell-O. We're just mixing this with the Cool Whip to give it a fruity flavor.

Canned mandarin oranges: These come filled with water, so make sure to drain them thoroughly; otherwise, the salad can get soggy. Also, if you're like me and really like fruit, you can double the amount.

Mini marshmallows: This is optional, but I like the extra fluffiness it adds.

Cottage cheese: Yes, you heard that right. Get the 4% fat version; small or large curds are both fine.

    Instructions

Jell-O powdered mixed with Cool Whip in bowl.

STEP 1: In a large bowl, combine the whipped topping and orange Jell-O

all ingredients folded together in bowl.

STEP 2: Gently stir in the cottage cheese, mandarin oranges, and marshmallows. Serve immediately or cover and chill in the fridge until ready.
