I'm not kidding when I say this is the best Salisbury steak recipe. I've made it for tons of friends and family over the years, and it always gets rave reviews. I've even joked to my wife about opening a food truck that sells just these.
But anyway, running a food truck is hard work, so I'll just share the recipe with you guys today. There is a laundry list of ingredients, but the actual process to make the patties and gravy is very straightforward. If you're worried about this recipe being complicated, don't be. I was able to make this in under one hour, and that included taking pictures and setting up my camera.
Key Ingredients

For the patties:
- Lean ground beef: I prefer lean, or even extra-lean, ground beef.
- Breadcrumbs: I used panko breadcrumbs. These give the hamburger steaks a more tender texture.
- Onions & garlic: Try to mince these as finely as possible. You can even blend them in a food processor.
- Egg: To help bind the ingredients together.
- Seasonings: Ketchup, Dijon mustard, Worcestershire sauce, salt, and black pepper.
For the gravy:
- Onions and garlic: For rich, savory depth.
- Olive oil: For sautรฉing the onions and garlic
- Mushrooms: I used white button mushrooms.
- Butter: For extra richness.
- Flour: To thicken the gravy.
- Beef broth: I mixed Better Than Bouillon roasted beef base with water.
Instructions

STEP 1: Combine the breadcrumbs and milk in a small bowl. Let this rest for 5 minutes.

STEP 2: In a large bowl, combine the rest of the hamburger steak ingredients. Add the soaked breadcrumbs and mix until thoroughly combined.

STEP 3: Shape the meat mixture into 4 patties.

STEP 4: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the patties and cook for 4-5 minutes on each side until cooked through. Remove to a plate, leaving the fat/oil behind.

STEP 5: Add another tablespoon of olive oil to the pan. Add the onions and garlic and saute for 2-3 minutes until softened.

STEP 6: Add the mushrooms, increase the heat to high, and saute for 5 minutes until the mushrooms have reduced in size and turned brown.

STEP 7: Add the butter and flour. Mix until combined.

STEP 8: Gradually pour in the beef broth while stirring constantly. Add the Worcestershire sauce. Let this bubble for a few minutes.

STEP 9: Add the hamburger steaks back to the pan and simmer until the sauce reaches your desired consistency. Enjoy!

Ingredients
Hamburger steak
- โ cup panko breadcrumbs
- 2 tablespoons milk
- 1 pound lean ground beef
- ยฝ medium onion (minced)
- 1 clove garlic (minced)
- 1 large egg
- 2 tablespoons ketchup
- 2 teaspoons dijon mustard
- 1 teaspoon Worcestershire sauce
- ยฝ teaspoon salt
- ยฝ teaspoon black pepper
Gravy
- 1 tablespoon olive oil
- 1 medium onion
- 2 cloves garlic
- 8 ounces mushrooms (sliced)
- 3 tablespoons butter
- 3 tablespoons flour
- 2 cups beef broth
- 1 teaspoon Worcestershire sauce
Instructions
- In a small bowl, combine the breadcrumbs and milk. Let this sit for 5 minutes. In the meantime, add the rest of the hamburger ingredients to a medium bowl. After 5 minutes, add the breadcrumbs to the hamburger mixture and mix well.
- Shape the hamburger mixture into 4 patties, about ยพ-inch thick.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the patties and cook each side undisturbed for 5-6 minutes until nicely browned. Remove to a plate, leaving the oil/fat behind
- Add the onions and garlic and saute for 2-3 minutes until softened. Add the mushrooms, increase the heat to high, and saute for another 5 minutes until brown.
- Reduce the heat to medium. Add the butter to the pan and wait for it to melt, then stir in the flour until it's evenly incorporated.
- Gradually add the beef stock and whisk until combined. Add the Worcestershire sauce and season with black pepper to taste. Bring to a boil, and let it bubble for 2-3 minutes.
- Add the hamburger steaks along with any juices to the pan. Cook for another 2-3 minutes until the gravy is thickened and the hamburger is cooked through. Enjoy!
