In a small bowl, combine the breadcrumbs and milk. Let this sit for 5 minutes. In the meantime, add the rest of the hamburger ingredients to a medium bowl. After 5 minutes, add the breadcrumbs to the hamburger mixture and mix well.
Shape the hamburger mixture into 4 patties, about ¾-inch thick.
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the patties and cook each side undisturbed for 5-6 minutes until nicely browned. Remove to a plate, leaving the oil/fat behind
Add the onions and garlic and saute for 2-3 minutes until softened. Add the mushrooms, increase the heat to high, and saute for another 5 minutes until brown.
Reduce the heat to medium. Add the butter to the pan and wait for it to melt, then stir in the flour until it's evenly incorporated.
Gradually add the beef stock and whisk until combined. Add the Worcestershire sauce and season with black pepper to taste. Bring to a boil, and let it bubble for 2-3 minutes.
Add the hamburger steaks along with any juices to the pan. Cook for another 2-3 minutes until the gravy is thickened and the hamburger is cooked through. Enjoy!
