About This Recipe
This Tuscan Chicken is one of my all-time favorite chicken dinners. It's extremely creamy and satisfying, and loaded with fresh spinach and sun-dried tomatoes. It reminds me a lot of Marry Me Chicken, which is also a creamy chicken dish, but not as tomatoey and fragrant. In fact, I wouldn't be surprised if Marry Me Chicken was inspired by Tuscan Chicken.
I love this recipe for a quick weeknight dinner, but it's also great for meal prep. I made a bit batch this time around, along with some extra pasta, and packed it up for my wife's office lunches this week. I'm posting this on a Thursday, and she already told me that a few coworkers complimented her lunch!
Key Ingredients

Olive oil: For searing the chicken and sautรฉing the onions and garlic. Feel free to use another type of oil, like canola or vegetable, if you like.
Chicken breasts: I used 2 large chicken breasts, sliced in half lengthwise to make thinner filets. This will help them cook faster.
Flour, salt & pepper: For coating and seasoning the chicken.
Onions & garlic: These will be sautรฉed to add fresh, savory flavor.
Heavy cream: The base of the sauce!
Fresh spinach: Fresh is best, but frozen will work too. If you use frozen, make sure to defrost it fully and squeeze out all the water.
Sun-dried tomatoes: You can either use sun-dried tomatoes from a jar or dried ones. I used dried because it was cheaper at the grocery store.
Italian seasoning: This adds a lot of delicious, aromatic flavor.
Parmesan cheese: Grate this yourself for the best texture, as pre-grated parmesan does not melt as easily.
Instructions

STEP 1: Whisk the flour, salt, and pepper in a shallow dish. Dredge the chicken breasts in the flour, making sure they're fully coated.

STEP 2: Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 2-3 minutes on each side until golden brown. Remove to a plate and set aside (we will finish cooking them in the sauce).

STEP 3: There should be some leftover oil in the skillet; if not, add another tablespoon. Add the onions and cook for 2-3 minutes. Add the garlic and cook for another minute.

STEP 4: Add the heavy cream, spinach, sun-dried tomatoes, and Italian seasoning. Bring to a simmer. Add back the chicken and cook for 3-5 minutes until the chicken is cooked through. Remove from the heat and stir in the grated Parmesan. Enjoy!

Tuscan Chicken
Ingredients
- ยผ cup flour
- 1 teaspoon salt
- ยฝ teaspoon black pepper
- 2 large chicken breasts (sliced in half lengthwise to make 4 filets)
- 3 tablespoons extra virgin olive oil
- ยผ cup finely chopped yellow onion
- 3 cloves garlic (minced)
- 1 ยฝ cups heavy cream
- 2 cups fresh spinach
- ยฝ cup sun-dried tomatoes (thinly sliced)
- 1 teaspoon Italian seasoning
- ยผ cup freshly grated parmesan
Instructions
- In a shallow dish, whisk together the flour, salt, and pepper. Dredge the chicken breasts in the flour, making sure they're fully coated.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken to the skillet in a single layer. Cook each side for 2-3 minutes until golden brown. Remove the chicken to a plate and set aside (we will finish cooking the chicken in the sauce later).
- Reduce the heat to medium. There should be some oil still in the pan; if not, add another tablespoon. Add the onions and cook for 2-3 minutes. Add the garlic and cook another minute.
- Add the heavy cream, spinach, sun-dried tomatoes, and Italian seasoning. Bring to a simmer. Add back the chicken and cook for 3-5 minutes until the chicken is heated through and the sauce has thickened a bit.
- Remove from the heat and stir in the parmesan. Enjoy!
