    Pina Colada Fluff

    This Pina Colada Fluff recipe has crushed pineapple, shredded coconut, and fluffy Cool Whip! It's creamy, tropical, and takes only about 15 minutes to make!

    About This Recipe

    Treat yourself to this fun and fruity fluff salad that tastes like a pina colada in every single bite! This recipe combines vanilla instant pudding mix, crushed pineapple, shredded coconut, mini marshmallows, and Cool Whip. It comes together in minutes and is perfect for potlucks, BBQs, and basically any type of summer gathering!

    I'm genuinely obsessed with the Midwestern style of "dessert salads". Every time I bring one up, people look at me like I just suggested putting ketchup on ice cream. But I don't get it! They're sweet, creamy, fruity, and full of marshmallows. What can you not like about that?

    This pina colada fluff is going straight to the top of my summer potluck list. It's light, refreshing, and SO easy to throw together. I used 20 ounces of crushed pineapple, so there was plenty of refreshing, fruity flavor. If you wanted it to be extra luxurious, you could throw in some fresh pineapple as well. Either way, I guarantee this will be the first thing gone at whatever event you bring it to.

    Crushed pineapple: Keep all the juices! It's what helps the pudding mix dissolve and gives the salad its tropical flavor. Draining it will make everything too dry and stiff.

    Vanilla instant pudding mix: This is what gives the salad its creamy body and helps it set up in the fridge. Make sure it's instant and don't prepare it beforehand- you want to mix it directly with the crushed pineapple juice.

    Cool Whip: Make sure it's fully thawed before you fold it in. Let it sit in the fridge overnight before you start.

    Mini marshmallows: If you're making this ahead of time, I recommend folding these in just before serving so they don't soak up too much of the pineapple juice.

    Shredded sweetened coconut: This is what gives it that pina colada flavour. You could toast this too, if you want a little bit more nuttiness.

    Walnuts: These add a layer of crunchiness! You can also use pecans.

    Instructions

    STEP 1: In a large bowl, combine the crushed pineapple (with the juices) and the vanilla pudding mix. Stir until dissolved, then chill for 5 minutes to thicken.

    STEP 2: Stir in the marshmallows, walnuts, and coconut flakes.

    Cool whip folded into pineapple jello mixture.

    STEP 3: Fold in the Cool Whip. Cover and chill until ready to serve. I like to reserve some of the pineapple to sprinkle on top for extra color.

    Ingredients
      

    • 1 (20-ounce) can crushed pineapple (with the juices)
    • 1 (3.4-ounce) box vanilla instant pudding mix
    • 1 cup miniature marshmallows
    • 1 cup shredded sweetened coconut
    • ยฝ cup chopped walnuts or pecans
    • 1 (8-ounce) tub Cool Whip (thawed)

    Instructions
     

    • In a large bowl, combine the crushed pineapple (with the juices) and the vanilla pudding mix. Stir until dissolved then chill for 5 minutes to thicken.
    • Stir in the marshmallows, coconut, and walnuts.
    • Fold in the Cool Whip. Chill until ready to serve.
