    About This Recipe

It's 2025 and the price of eggs is on a steep incline- $6 a dozen for the cheapest boxes! Compare that to last year when it was just $3 a dozen. When prices reach insurmountable levels, you're going to want to have this eggless pancake recipe in your back pocket. So bookmark this page, save the recipe, print it out... do whatever you need to do before the eggpocalypse is here.

But enough of this doom talk. Let's talk about more positive things. Like these pancakes.

They're fluffy, tall, soft, and as close to biting a cloud as you'll ever get. You might think eggs are required for a good pancake, but this recipe proves they're not. You can have delicious pancakes without them!

I didn't even do anything special with this recipe. I didn't replace the eggs with anything else. I just took my regular pancake recipe, removed the eggs, and adjusted the flour and milk to balance it out. They ended up great!

    Key Ingredients

    ingredients prepped in bowl.

My recipe uses only 6 simple pantry ingredients, and if you do any sort of cooking, you probably already have them at home.

Dry ingredients: You'll need all-purpose flour, baking powder, and sugar.

Wet ingredients: Milk, vanilla extract, and melted butter (oil also works).

    Instructions

    dry ingredients whisked in bowl.

STEP 1: Combine the flour, baking powder, and sugar in a large bowl. Whisk.

wet ingredients mixed together in bowl.

STEP 2: In another bowl, whisk together the milk, vanilla extract, and melted butter. It's okay if the milk and butter do not completely emulsify into each other.

    batter in bowl.

STEP 3: Add the wet ingredients to the dry ingredients and mix until they are just combined. The batter should look like the picture above, kinda lumpy.

STEP 4: Heat a skillet over medium heat and grease it with butter or oil. Add a ยผ cup of batter and cook for 2 minutes until the edges dry up and the surface forms bubbles.

pancake flipped to show golden brown side.

STEP 5: Flip and cook the other side for another 1-2 minutes until golden brown and cooked through. Serve with your favorite pancake toppings!

    • 2 cups all-purpose flour
    • 2 tablespoons sugar
    • 1 tablespoon baking powder
    • 2 cups milk
    • 1 teaspoon vanilla extract
    • 4 tablespoons melted butter (or oil)

    Instructions

    • To a large mixing bowl, add the flour, sugar, and baking powder. Whisk together.
    • In another bowl, whisk the milk, vanilla, and melted butter. The butter might not emulsify into the milk, and that's fine.
    • Pour the wet ingredients into the dry ingredients and mix until just combined - do not overmix. There should be lots of lumps in the batter.
    • Heat a greased skillet over medium heat until hot. Add ยผ cup of batter into the pan. Cook for 2 minutes until the edges start to dry up and bubbles form on the surface. Flip, and cook for another 1-2 minutes until cooked through.
    • Serve with your favorite pancake toppings!
