I think of all the different types of pancakes, blueberry pancakes have to be my favorite. I love the bursts of juiciness you get and the freshness that they add. Pancakes can be a bit too heavy sometimes, but blueberries help balance them out.
I recently discovered a new variety of blueberries at the grocery store! They're called the "sweetest batch blueberries" from the Driscoll's brand. I bought some to try and they were just as the name said. They were SUPER sweet! Like, sweeter than any blueberry I've ever had, even sweeter than the ones I've freshly picked in the summer.
I knew I wanted to try adding them to my pancakes! This recipe is very similar to my regular pancake recipe, but I added a little bit more milk to help the batter flow easier. The first time I made them, I found the batter was too thick, and it couldn't spread around the berries, so the pancakes had odd shapes. They were still delicious, but they just looked weird.
Key Ingredients
Dry ingredients: All-purpose flour, sugar, salt, and baking powder.
Wet ingredients: Milk, eggs, melted butter, and vanilla extract.
Blueberries: I used fresh blueberries but you can also use frozen. The important thing to remember for frozen berries is that their color will bleed into the batter. To avoid this, don't fold them into the batter. Instead, scoop the batter into the pan and add the frozen blueberries directly to each pancake.
Instructions
STEP 1: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
STEP 2: In a separate bowl (or large measuring cup), whisk together the milk, eggs, melted butter, and vanilla extract. It's okay if the butter solidifies here.
STEP 3: Make a well in the dry ingredients and pour the wet ingredients inside. Mix until JUST combined (do not overmix).
STEP 4: Add the blueberries and fold gently.
STEP 5: Heat a greased skillet over medium heat. Add β cup of batter and cook until the edges look dry and bubbling begin forming on the surface.
STEP 6: Flip and continue cooking for 1-2 minutes until golden brown on the bottom.

Fluffy Blueberry Pancakes
Ingredients
- 1 Β½ cups all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- Β½ teaspoon salt
- 1 β cups milk
- 1 large egg
- ΒΌ cup melted butter (or oil)
- 2 teaspoons vanilla extract
- 1 cup blueberries (fresh or frozen)
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, mix the milk, egg, melted butter, and vanilla extract.
- Make a well in the center of the dry ingredients and pour in the wet mixture. Stir gently with a spatula until JUST combined (some lumps in the batter are okay). If using fresh blueberries, gently fold them into the batter.
- Heat a greased skillet over medium-high heat. Pour β cup of batter onto the skillet. If using frozen berries, sprinkle them evenly onto each pancake immediately after pouring the batter. Cook for 2 minutes, or until bubbles begin to form on the surface. Flip and cook for another 1-2 minutes, until golden brown.
- Serve with maple syrup or your favorite pancake toppings!
