    Ricotta Pancakes

    The easiest homemade Ricotta Pancakes - made with basic pantry ingredients in just 20 minutes! They're just as fluffy as regular pancakes but with a delicious richness and creaminess from ricotta cheese!

    About This Recipe

    I've been making my classic pancake recipe since I was a kid, but recently, my friend's girlfriend suggested I try making ricotta pancakes instead. She said they were even more delicious than regular pancakes and with just a hint of richness from ricotta.

    I was a bit skeptical because I'd never heard of cheese in pancakes. But I gave it a try and turns out she was right. They were super tasty! I didn't taste the cheese at all, but they made the pancakes creamier and slightly richer. I'd definitely recommend them if you're looking for something more indulgent.

    If you want something more cheesy, I'd suggest adding some shredded mozzarella to the batter. I haven't tried it personally, but I really want to now! Recipe coming soon?

    Key Ingredients

    Dry ingredients: You'll need all-purpose flour, sugar, baking powder, and salt.

    Wet ingredients: Milk, eggs, oil, and vanilla extract.

    Ricotta cheese: I recommend using the traditional ricotta that comes in small curds so that they disperse evenly into the batter.

    Optional: Some people love adding some lemon juice to these as well. If you want to do that, just add 1 tablespoon of lemon juice and 1 teaspoon of the zest to the wet ingredients. If the batter ends up being too thin, you can always sprinkle on a few tablespoons of flour to thicken it up.

    STEP 1: Combine the all-purpose flour, sugar, baking powder, and salt in a large mixing bowl.

    STEP 2: In a seperate bowl, whisk together the milk, eggs, ricotta cheese, oil, and vanilla extract.

    STEP 3: Make a well in the center of the dry ingredients and dump the wet ingredients into it. Mix until JUST combined (there should be plenty of lumps).

    STEP 4: Heat a skillet over medium heat and brush with oil. Add ยผ cup of batter and cook until bubbles start forming on the surface, 2 minutes.

    STEP 5: Flip and cook the other side for 1-2 more minutes until golden brown. Enjoy!

    Ingredients
      

    • 1 cup all-purpose flour
    • ยผ cup sugar
    • 1 ยฝ teaspoons baking powder
    • ยผ teaspoon salt
    • 1 cup ricotta cheese
    • ยพ cup milk
    • 2 large eggs
    • 1 tablespoon oil
    • 2 teaspoon vanilla extract

    Instructions
     

    • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
    • In a separate bowl, whisk together the ricotta, milk, eggs, oil, and vanilla extract.
    • Make a well in the center of the dry ingredients. Pour the wet ingredients into the well and mix until JUST combined. The batter should have plenty of lumps. Be careful not to overmix here.
    • Heat a skillet over medium heat. Brush it with oil. Pour ยผ cup of batter into the skillet and cook until bubbles start to form on the surface, 2 minutes. Flip and cook for 1-2 more minutes until golden brown.
    • Serve with maple syrup and your favorite pancake toppings!
