Fluffy Blueberry Pancakes

These blueberry pancakes are perfect for your next breakfast. Made with fresh or frozen blueberries, they are soft, fluffy, juicy, and super easy to make.

  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • In a separate bowl, mix the milk, egg, melted butter, and vanilla extract.
  • Make a well in the center of the dry ingredients and pour in the wet mixture. Stir gently with a spatula until JUST combined (some lumps in the batter are okay). If using fresh blueberries, gently fold them into the batter.
  • Heat a greased skillet over medium-high heat. Pour ⅓ cup of batter onto the skillet. If using frozen berries, sprinkle them evenly onto each pancake immediately after pouring the batter. Cook for 2 minutes, or until bubbles begin to form on the surface. Flip and cook for another 1-2 minutes, until golden brown.
  • Serve with maple syrup or your favorite pancake toppings!
