To a large mixing bowl, add the flour, sugar, and baking powder. Whisk together.
In another bowl, whisk the milk, vanilla, and melted butter. The butter might not emulsify into the milk, and that's fine.
Pour the wet ingredients into the dry ingredients and mix until just combined - do not overmix. There should be lots of lumps in the batter.
Heat a greased skillet over medium heat until hot. Add ¼ cup of batter into the pan. Cook for 2 minutes until the edges start to dry up and bubbles form on the surface. Flip, and cook for another 1-2 minutes until cooked through.
Serve with your favorite pancake toppings!
