    Juicy and tender on the inside, this Easy Baked Lamb Loin Chops recipe is perfect for dinner any night of the week. This recipe comes together so easily in just a few simple steps and ingredients that you'll want to make this every day.

    About This Recipe

    I love lamb meat! It's so delicious and more flavorful than pork or beef, and can be deliciously juicy if you cook it properly. It is rather expensive, so I don't eat it too often, but this weekend, for Mother's Day, I decided to treat my wife to some lamb chops for dinner.

    These baked lamb chops are impressive, super flavorful, and the oven does most of the work! There is a quick searing step to get a beautiful, crispy crust and some gorgeous color on the outside, but it couldn't be easier. It's a wonderful recipe to whip up on a busy weeknight when you don't want to spend hours following a bunch of steps. It's not complicated at all, but it'll hit the spot every time!

    You only need a few ingredients (mainly seasonings), and these lamb chops go well with so many side dishes. For example, try serving them with potato wedges, honey-glazed carrots, or my kale salad.

    Lamb loin chops: You can find these in the freezer section of most grocery stores. The brand I use has 4 loins per pack, so I bought 2 packs. If you want to swap them for lamb rib chops or shoulder chops, the baking time will need to be adjusted.

    Vegetable oil: Helps the lamb chops get a brown color on the outside during searing. Feel free to use any neutral oil, like avocado oil or canola oil.

    Seasoning: I use a combination of salt, garlic powder, dried thyme, and black pepper, but you can use your favorite seasoning blend.

    STEP 1: Coat the chops with the oil and seasonings. For the best results, let the lamb chops marinate for at least 30 minutes, but if you're short on time, you can skip this.

    STEP 2: Heat a large oven-safe skillet (I use a cast-iron) over medium-high heat. Sear the chops in batches for 2-3 minutes per side until lightly browned.

    STEP 3: Transfer the skillet to the oven and bake for 8-14 minutes until your desired doneness is reached. 8-10 minutes for medium-rare, 10-12 for medium, and 12-14 for well done. Remove from oven and rest for 5 minutes before slicing. This allows some time for the juices to redistribute in the meat, and your lamb chops will come out more juicy.

    Ingredients
      

    • 8 lamb loin chops
    • 2 tablespoons vegetable oil (plus more for greasing the skillet)
    • 1 teaspoon salt
    • 1 teaspoon garlic powder (fresh minced garlic)
    • 1 teaspoon dried thyme
    • ยฝ teaspoon black pepper

    Instructions
     

    • Preheat your oven to 400ยฐF.
    • Pat the chops dry with paper towels.
    • In a large bowl or plate, coat the chops with the oil and seasonings.
    • Heat a large oven-safe skillet (I use cast-iron) over medium-high heat. When hot, lightly coat with oil.
    • Sear the chops for 2-3 minutes per side until lightly browned.
    • Transfer the skillet to the oven and bake for 8-14 minutes until your desired doneness is reached: 8-10 minutes for medium-rare, 10-12 for medium, and 12-14 for well done.
    • Remove from oven and let rest for 5 minutes before serving. Enjoy!
