Made with simple pantry spices, these Baked Lamb Loin Chops are perfect for a weeknight dinner. The outside is beautifully caramelized, and the inside is so juicy and tender.
In a large bowl or plate, coat the chops with the oil and seasonings.
Heat a large oven-safe skillet (I use cast-iron) over medium-high heat. When hot, lightly coat with oil.
Sear the chops for 2-3 minutes per side until lightly browned.
Transfer the skillet to the oven and bake for 8-14 minutes until your desired doneness is reached: 8-10 minutes for medium-rare, 10-12 for medium, and 12-14 for well done.
Remove from oven and let rest for 5 minutes before serving. Enjoy!
