These honey-roasted carrots are one of my go-to side dishes. They're perfect for basically any meal, but they're extra special for holidays like Thanksgiving, Christmas, and Easter. The carrots come out perfectly tender with a sweet and earthy flavor. They're super easy to make, too. Just toss the carrots with olive oil, honey, and seasonings and roast until they're tender!
They are also great for packing into lunch boxes! We had a bunch of leftovers, and my wife was able to pack a few pieces for her lunch each day.
One important thing I learned is not to mix the ingredients in advance. Initially, I mixed everything in a bowl and left it in my fridge for a few hours. But I realized the honey extracts the water out of the carrots and creates a pool of water at the bottom. It's best to mix the ingredients right before roasting so that the water doesn't get released before roasting.
Key Ingredients
Carrots: I found that smaller carrots work better because they have more surface area to get caramelized in the oven. You can also cut them at an angle to give them even more surface area. To do so, slice the carrot at an angle, then rotate it 90 degrees and cut at another angle. Repeat this until the whole carrot is cut.
Olive oil: I used extra virgin olive oil.
Honey: Any type of honey should work. You can even use brown sugar in a pinch.
Garlic: Garlic tastes amazing in this. I guess technically these are honey garlic roasted carrots.
Black pepper and salt: I specified measurements for these, but you can add them to your own taste.
Instructions
STEP 1: Cut the carrots into 2-inch pieces at an angle. For any large pieces, cut them in half as well. This will help them cook at the same rate as the smaller pieces. Transfer the carrots to a large bowl and toss with olive oil, honey, garlic, salt, and black pepper.
STEP 2: Spread the carrots on a baking sheet with some space between each one.
STEP 3: Bake at 425℉ oven for 20-25 minutes until soft and tender.

Ingredients
- 2 pounds carrots (peeled)
- 2 tablespoons extra virgin olive oil
- ¼ cup honey
- 3 cloves garlic (minced)
- ½ teaspoon salt
- ½ teaspoon pepper
Instructions
- Preheat your oven to 425℉
- Cut the carrots into 2-inch pieces at an angle. Cut any large pieces in half as well. This will ensure they cook at the same rate as the smaller pieces. Transfer to a large bowl.
- To the bowl, add the rest of the ingredients and toss to combine.
- Spread the carrots on a baking sheet with some space between each one and roast for 20-25 minutes until soft and tender. Enjoy!
