    About This Recipe

This has been our favorite dinner lately. I've made it many times over the years before I even thought of posting it here. It's super easy to make! The ingredient list is very short, and the recipe requires only 5 minutes of prep. If I weren't always trying to come up with new recipes, I might just eat this most nights (maybe switch up the seasonings every so often to not get bored).

    fork lifting slice of pork.

I whisked some spices with a little olive oil and apple cider vinegar before brushing them all over the pork chops. Then I baked them until they were juuuust cooked through (a little under 145F to account for carry-over heat). They were super juicy and flavorful.

A quick note about the carryover heat. When the meat comes out of the oven, it's going to continue increasing in temperature for a few minutes. The exact time depends on how hot your oven is and how thick the meat is. I generally find it can increase anywhere from 2-8 degrees Fahrenheit. Just use a thermometer to check the temperature, and pull it out while it's slightly under. You'll be sure to have juicy pork chops.

    Key Ingredients

    ingredients prepped in bowls.

Pork Chops: I used boneless pork chops, but you can use bone-in if you prefer. For boneless, I also cut small slits into the fat cap so that the pork chops would not curl during baking.

Olive oil: This helps the spices adhere to the pork chops.

Apple cider vinegar: Helps tenderize the meat and add flavor. I love using apple cider vinegar because apple pairs really well with pork, but any type of vinegar should work.

Brown sugar: For balancing the vinegar.

Spices: For the remaining dry rub, you'll need paprika, salt, oregano, garlic powder, and black pepper.

    Instructions

    spice mixture in bowl.

STEP 1: In a small bowl, whisk the olive oil, apple cider vinegar, brown sugar, and spices together.

pork chops rubbed with marinade in bowl.

STEP 2: Rub all over the pork chops.
