    Banana Oatmeal Pancakes

    These Banana Oatmeal Pancakes are incredibly easy to make with just 6 ingredients in 15 minutes. All you do is blend everything, then pan-fry for 2-3 minutes per pancake. The sweetness of the banana combined with the gritty texture of oats is something I could eat for breakfast every day!

    About This Recipe

    I have been on a bit of a pancake binge recently! A few weeks ago I shared my everyday pancake recipe (perfect for when you don't have many ingredients at home), and earlier this week I shared my creamy ricotta pancakes. Well, today, I'm sharing my banana oatmeal pancakes!

    These pancakes are SO easy to make and they come out super fluffy. Despite not having any flour (yes, these are gluten-free), they still have that delicious fluffy and cakey texture. The secret is to blend the oats in the blender to make a finely ground powder.

    I actually tested two methods of blending the oats for this recipe. First I tried blending the oats alone, then mixing in the rest of the ingredients. Second, I tested just blending all the ingredients at once. To my surprise, there was no difference in how they turned out. So I recommend just blending everything together at once. One simple step.

    Key Ingredients

    Ripe bananas: Using very ripe bananas is key. That way, you do not have to add any sweetener. If your bananas are not very ripe, you can add up to one tablespoon of maple syrup, honey, or sugar. But personally, I prefer unsweetened pancakes because you can always top with more syrup afterward.

    Oats: Any type of oat should work. I used whole-grain oats.

    Milk: I used half a cup of milk. If the batter is too thick, you can add a bit more.

    Eggs: Eggs help bind the ingredients together and moisten the oats.

    Baking powder: For providing the perfect lift and fluffiness.

    Salt: Just a little bit to enhance all the flavors!

    STEP 1: To a blender, add all the ingredients.

    STEP 2: Blend on medium-high speed for 20-25 seconds until smooth (the smoother the better!).

    STEP 3: Heat a greased skillet over medium heat. Add ¼ cup of batter and cook until bubbles start forming on the surface, about 2 minutes.

    STEP 4: Flip and cook for another 1-2 minutes until golden brown. If you find the pancakes are browning too fast, just reduce the heat to medium-low.

    • 2 large ripe bananas
    • 1 ½ cups oats
    • ½ cup milk
    • 2 large eggs
    • 2 teaspoons baking powder
    • ¼ teaspoon salt

    Instructions
     

    • Add all the ingredients to a blender and blend on medium-high speed for 20-25 seconds until smooth.
    • Heat a greased skillet over medium heat. Add ¼ cup of batter and cook until the edges begin to dry and bubbles form on the surface, 2 minutes. Flip and cook for another 1-2 minutes until golden brown.
    • Serve with your favorite pancake toppings!
