    Sweet Potato Pie

    This Sweet Potato Pie is smooth, creamy, and perfect for your holiday table. Made with store-bought crust and fresh sweet potatoes, it's easy to make (only 5 minutes of prep!), and always a hit at Thanksgiving or Christmas.

    About This Recipe

    This sweet potato pie recipe is one of my favorite desserts to make in the fall. It features a flaky store-bought pie crust and a warmly spiced sweet potato filling. It reminds me a lot of pumpkin pie, but obviously more sweet potato-y. Also, sweet potatoes have tons of fiber, which is always a bonus in today's day and age.

    This recipe is super quick to make because we're skipping the whole make-your-own-crust type thing. All you need to do is prepare the filling, pour it into the crust, and then bake. For cooking the sweet potatoes, I've found that chopping them into cubes and boiling them in water is the fastest way to cook them. A lot of people have you roast the potatoes whole for 45-60 minutes, but I've found that to be unnecessary.

    Sweet potatoes: You will need about 1.5 pounds of sweet potatoes. This is usually either one very large sweet potato or two medium ones. The exact amount does not matter that much.

    Butter: Gives the filling a rich and creamy texture.

    Brown sugar: For sweetness.

    Eggs: Help the filling set into the perfect texture.

    Milk: You can use either evaporated or whole milk. Personally, I prefer evaporated milk when it's available because it has a slightly caramelized flavor.

    Flavorings: Vanilla, cinnamon, nutmeg, and salt.

    Pie crust: You'll need one deep-dish pie crust for this recipe.

    STEP 1: Place the sweet potatoes in a large pot of water. Bring to a boil, then cook for about 15 minutes, or until fork-tender. Drain.

    STEP 2: Mash the sweet potatoes in a large mixing bowl.

    STEP 3: Whisk in the melted butter until smooth. In a separate bowl, whisk the remaining filling ingredients until combined. Pour into the sweet potatoes and whisk until smooth.

    • 2 medium sweet potatoes (about 1 ยฝ pounds; peeled and cut into chunks)
    • โ…“ cup butter (melted)
    • ยพ cup packed brown sugar
    • 2 large eggs
    • ยฝ cup milk (evaporated or whole)
    • 1 teaspoon vanilla extract
    • 1 teaspoon ground cinnamon
    • ยฝ teaspoon ground nutmeg
    • ยผ teaspoon salt
    • 1 (9-inch) deep-dish pie crust

    Instructions
     

    • Preheat your oven to 350ยฐF and set the rack in the lower-middle position.
    • Place the sweet potatoes in a large pot of water. Bring to a boil, then cook for about 15 minutes, or until fork-tender. Drain.
    • Mash the sweet potatoes in a large mixing bowl. Whisk in the melted butter until smooth.
    • In another bowl, whisk the eggs, milk, vanilla extract, cinnamon, nutmeg, and salt. Pour this into the sweet potatoes and whisk until smooth.
    • Pour the filling into the pie crust.
    • Bake for 45-50 minutes until the crust is golden brown and the filling is set. Allow to cool for 10 minutes before serving.
