    Stuffed Pepper Soup

    This Stuff Pepper Soup is the perfect soup for fall and winter. Made with ground beef, rice, bell peppers, tomato sauce, and other simple ingredients, it's cozy, comforting, and delicious!

    About This Recipe

    When stuffed peppers meet cozy fall soups, you get this stuffed pepper soup!

    Let's be honest... making anything "stuffed" is a pain in the butt, especially on busy weeknights. That's why you never catch me making twice-baked potatoes or stuffed peppers after work. I'm always making simple, one-pot dishes, like Zuppa Toscana or Chicken Broccoli Pasta.

    This stuffed pepper soup is an easier version of stuffed peppers, but with all the same flavors. It's made with ground beef, bell peppers, tomato sauce, Italian seasoning, and other simple pantry ingredients. My recipe makes a big batch- enough to feed 8 people- so it's perfect for big families, or if you like having leftovers.

    Small note on leftovers: The rice tends to absorb some of the broth overnight, so if you heat it up the next day, just add a bit of extra broth or water to turn it back into a soup. Happy soup making!

    Key Ingredients

    Olive oil: For sauteeing the beef, onions, and garlic.

    Ground beef: I use lean ground beef. If you use regular fat, I'd recommend draining some of the fat after the first step.

    Onions & garlic: For savory depth.

    Beef broth: I used 4 cups of Campbell's beef broth and then made another 2 cups of beef broth using Better Than Bouillon mixed with water. You can also use chicken stock for this recipe.

    Diced tomatoes: You'll need one 28-ounce can or two 14-ounce cans.

    Tomato sauce: You can also substitute this with tomato paste and some extra water.

    Bell peppers: You'll need 3 peppers, and you can use any color you want.

    Rice: Any type of rice should work, such as jasmine rice, sushi rice, etc. I used arborio rice, which is typically meant for risotto.

    Italian seasoning: A basic blend of dried herbs that I use in a lot of my soup recipes. It adds tons of great flavors.

    Salt and black pepper: Add to your own taste.

    STEP 1: Heat the olive oil in a large pot over medium-high heat. Cook the beef, onions, and garlic for 6-7 minutes until no longer pink.

    STEP 2: Add the beef broth, diced tomatoes, tomato sauce, bell peppers, rice, Italian seasoning, 1 teaspoon salt, and ยฝ teaspoon pepper. Bring to a boil, then reduce to a simmer, and cook for 20-25 minutes until the rice is softened.

    • 1 tablespoon olive oil
    • 1 pound lean ground beef
    • 1 medium onion (diced)
    • 3 cloves garlic (minced)
    • 6 cups beef broth (or chicken broth)
    • 1 (28-ounce) can diced tomatoes
    • 1 (14-ounce) can tomato sauce
    • 3 medium bell peppers (any color; diced)
    • ยพ cup uncooked rice
    • 1 tablespoon Italian seasoning
    • salt and pepper (to taste)

    Instructions
     

    • Heat the olive oil in a large pot over medium-high heat. Cook the beef, onions, and garlic for 6-7 minutes until no longer pink.
    • Add the beef broth, diced tomatoes, tomato sauce, bell peppers, rice, Italian seasoning, 1 teaspoon salt, and ยฝ teaspoon pepper. Bring to a boil, then reduce to a simmer, and cook for 20-25 minutes until the rice is softened.
    • Taste and add more salt or black pepper as needed. Enjoy!
