When the colder months roll around, there is nothing I crave more than a cozy Lasagna Soup. You may have seen this on TikTok recently, as it's making its way around. This is my version with Italian sausages, tomatoes, ricotta cheese, cream, and lasagna noodles.

About This Recipe
My wife and I spent the first official week of fall eating bowl after bowl of this lasagna soup! I made a double batch so we could eat it all week. Another fun fact, my wife and I will be heading off to Japan this week, so I'll be MIA for the next three weeks. But I've added a bunch of fall recipes in the last few weeks, so I hope you guys have some fun stuff to cook!
When the days feel chilly, there is nothing better than this lasagna soup. It's tomato-y and creamy broth brightens up any gray day, and the layers of pasta, meat, and cheese warm you from the inside out.
I've already eaten this soup for the last 3 days, but I'm still stuck on how delicious it is! It's rich and creamy, with the perfect amount of tang from canned tomatoes and tomato paste, and the texture of the lasagna noodles and creamy ricotta is so cozy and comforting.
Key Ingredients

Italian Sausages: Many recipes use ground beef, but I think the additional flavor in sausages makes all the difference. I always recommend mild Italian sausages, since I find the spice of hot Italian sausages too overpowering.
Onion & garlic: Provide sweet and savory depth to the soup.
Diced Tomatoes: Provides acidity and texture. You can also use crushed tomatoes.
Tomato Paste: What I love about tomato paste is that not only does it provide acidity, but it also thickens the soup.
Chicken Broth: You can use homemade or store-bought broth. I used Campbell's chicken broth with no salt added.
Sugar: This makes a huge difference to the taste of the soup. Tomatoes are very acidic, so sugar helps balance the flavor.
Italian Seasoning: I like to add a little more than other recipes call for. It makes the soup taste that much better.
Salt and pepper: Add to your own taste.
Heavy Cream: This is what gives the soup that luxurious creamy texture. I forgot to add this in the ingredient picture above :(.
Lasagna Noodles: You can either cook them beforehand and chop them up, or break them into pieces and cook them directly in the soup.
Toppings: I love this with just plain ricotta cheese. But many recipes use mozzarella and parmesan as well.
Instructions

STEP 1: Heat a large pot over medium heat. Cook and crumble the Italian sausages, onions, and garlic for 7-8 minutes.

STEP 2: Add the tomato paste and cook for 30 seconds.

STEP 3: Add the diced tomatoes, chicken broth, sugar, Italian seasoning, salt, and black pepper.

STEP 4: Bring to a boil, then add the lasagna noodles (broken into 4ths). Reduce to a simmer and cook for 10 minutes, or until the lasagna noodles are soft.

STEP 5: Stir in the heavy cream. Taste and add more salt and black pepper as necessary. Ladle into bowls and serve with the desired toppings.

- 1 pound mild Italian sausages
- 1 large onion (diced)
- 3 cloves garlic (minced)
- 1 (6-ounce) can tomato paste
- 1 (28-ounce) can diced tomatoes (or crushed)
- 4 cups chicken broth
- 1 tablespoon sugar
- 1 teaspoon Italian Seasoning
- ยฝ teaspoon salt (or more to taste)
- ยฝ teaspoon black pepper (or more to taste)
- 8 ounces lasagna noodles
- ยฝ cup heavy cream
Toppings
- ricotta cheese, mozzarella cheese, parmesan cheese
Instructions
