This creamy Lasagna Soup is one of my favorite fall soup recipes. Made with Italian sausages, tomatoes, cream, and chicken broth. Serve with your favorite cheesy toppings like ricotta or mozzarella cheese!
Heat a large pot over medium heat. Cook and crumble the Italian sausages, onions, and garlic for 7-8 minutes.
Add the tomato paste and cook for 30 seconds.
Add the diced tomatoes, chicken broth, sugar, Italian seasoning, salt, and black pepper. Bring to a boil, then add the lasagna noodles (broken into 4ths). Reduce to a simmer and cook for 10 minutes, or until the lasagna noodles are soft.
Stir in the heavy cream. Taste and add more salt and black pepper as necessary.
Ladle into bowls and serve with the desired toppings (I love just plain ricotta!).
