    Sausage Tortellini Soup

    This creamy Sausage Tortellini Soup is restaurant-quality and ready in only 30 minutes! It's comforting, flavorful, loaded with Italian sausages, cheese tortellini, and kale, and all simmered in the most irresistible tomato and chicken broth.

    About This Recipe

    One of the soup recipes I look forward to the most in the fall is creamy sausage and tortellini soup. It's super cozy and comforting, and one of the rare soups that makes you feel extremely satisfied at the end. It has hearty Italian sausages, plenty of cheese tortellini, and a healthy amount of fresh kale.

    Italian sausages cook down with onions and garlic to form the rich and savory base of the soup. I typically drain the fat after sauteeing the sausages to make it slightly healthier (and less spicy), but feel free to leave it in. Diced tomatoes add brightness to the soup, and Italian seasoning ties all the flavors together.

    In terms of autumn soups, cream = comfort. I love adding a cup of heavy cream to help soften the spices and acidity. It makes the soup so delicious, luxurious, and cozy.

    Italian sausages: If you're using sausage links, remove the casings beforehand. I prefer mild Italian sausages for this soup, but you can use spicy ones if you prefer. Also, Italian sausages have quite a bit of fat in them, so you can drain some of it after the first step. Or leave it in, it's up to you.

    Onions and garlic: They add savory depth of flavor.

    Flour: Helps thicken the soup slightly.

    Chicken broth: I use Campbell's chicken broth with no salt added.

    Diced tomatoes: These provide acidity.

    Heavy cream: Adds richness and mellows out the acidity and spices.

    Kale: You can use either fresh or frozen kale leaves.

    Tortellini: I use 3-cheese or 4-cheese tortellini. Mine took about 5 minutes to cook through. If your tortellini are bigger, you may need to increase the cooking time a bit.

    Salt and pepper: To make all the flavors pop.

    Instructions

    Disclaimer: I doubled the recipe in the pictures because I was making it for some extra guests!

    STEP 1: Heat a large pot over medium heat. Cook and crumble the Italian sausage, onions, and garlic for 6-7 minutes. If desired, drain the fat from the pot.

    STEP 2: Add the flour and stir to distribute it evenly.

    STEP 3: Add the chicken broth, diced tomatoes, and Italian seasoning. Bring to a boil, then reduce to a simmer and cook for 10 minutes.

    STEP 4: Add the cream, kale, and tortellini. Bring to a boil again, then simmer for 3-5 minutes until the tortellini is cooked. Taste and season with salt and black pepper to taste. Enjoy!

    Ingredients
      

    • 1 pound Italian sausage (casings removed)
    • 1 medium onion (chopped finely)
    • 3 cloves garlic (minced)
    • 2 tablespoons flour
    • 4 cups chicken broth
    • 1 (14.5-ounce) can diced tomatoes
    • 1 teaspoon Italian seasoning
    • 1 cup heavy cream
    • 2 cups packed kale leaves (torn into pieces)
    • 2 cups tortellini
    • salt and pepper (to taste)

    Instructions
     

    • Heat a large pot over medium heat. Cook and crumble the Italian sausage, onions, and garlic for 6-7 minutes. If desired, drain the fat from the pot.
    • Add the flour and stir to distribute it evenly.
    • Add the chicken broth, diced tomatoes, and Italian seasoning. Bring to a boil, then reduce to a simmer and cook for 10 minutes.
