    About This Recipe

Fun fact: for the longest time, I thought "Brussels sprouts" was spelled "brussel sprouts". I didn't know there was an s at the end, and the B is capitalized. It's because it's named after the city of Brussels in Belgium!

Brussels sprouts are one of those rare foods that you want to burn slightly. You don't want them completely burned, for obvious reasons, but you do want a deep caramelization that is darker than most other vegetables. The deep caramelization is what turns their flavor from bitter to super tasty.

This Brussels sprouts recipe couldn't be any easier. All you do is cut the Brussels sprouts in halves, toss them with oil, salt, and black pepper, and bake them for 15-25 minutes.

One thing I learned is that the side of the Brussels sprout that touches the baking sheet will become more charred than the side that faces the top element. So, if you want more char, place the Brussels sprouts cut-side down. However, if you're lazy like me, you can just dump everything in the pan without worrying.

    Key Ingredients

I love to roast my Brussels sprouts very simply with just extra virgin olive oil, salt, and black pepper. Try to find the largest Brussels sprouts possible. They can be heated in the oven for longer without becoming mushy. Hence, you can get a better char on them.

If you're feeling fancy, you can also drizzle on some lemon or balsamic vinegar.

    Instructions

Brussels sprouts cut in halves on cutting board.

STEP 1: Cut the Brussels sprouts in half.

Brussels sprout halves tossed with olive oil, salt, and pepper in bowl.

STEP 2: Transfer to a large bowl and add the olive oil, salt, and pepper, and toss until well combined.

halved Brussels sprouts spread on baking sheet.

STEP 3: Spread the Brussels sprouts in a single layer on the baking sheet.

Brussels sprouts after roasting for 20 minutes.

STEP 4: Bake in a 450°F oven for 15-25 minutes until the edges are brown and caramelized. Enjoy!
