    About This Recipe

If there is any protein that is underrepresented on this blog, it has to be pork. I personally do not eat it that often - not nearly as much as other proteins, like chicken or beef - not because I dislike it, but I find it less versatile. For example, off the top of my head, I can easily name a dozen cream or tomato-based chicken dishes, but I'd struggle to name even a few for pork.

That said, I am in love with this baked pork tenderloin recipe. The meat comes out melt-in-your-mouth tender, juicy, and so flavorful. I start by rubbing spices all over the tenderloins, then I bake them for just 20-25 minutes until they're just cooked but still juicy. After they're baked, I let them rest for 10 minutes before cutting, to allow the juices to redistribute in the meat.

My mouth is already salivating a bit just thinking about how good these tasted. By the way, it's totally okay for pork to be a little pink after cooking. The best way to check that your pork is done is by using a thermometer. Aim for a temperature of 140ยฐF before taking them out of the oven. They'll be perfectly safe to eat by then.

    Key Ingredients

    ingredients prepped in bowls.

Ignore the extra dish of water in the picture. I accidentally included that from another recipe I was doing at the same time!

Pork Tenderloins: You'll need 2 pork tenderloins (about 1 pound each). They're usually sold together in a 2-pack since each pig has two tenderloins.

Spices: Olive oil, paprika, Italian seasoning, garlic powder, salt, and black pepper.

Butter: I like to top the pork tenderloins with some butter, which helps keep the meat moist on the outside. You also end up with a delicious spiced butter sauce to drizzle all over your pork before serving.

    Instructions

    spice rub mixed in bowl.

STEP 1: In a small bowl, mix together the olive oil and spices.

spice mixture rubbed over pork tenderloins.

STEP 2: Rub all over the pork tenderloins and place in a 9x13 baking dish.

slabs of butter placed on top of tenderloins.

    STEP 3: Top with butter.

    pork tenderloins after baking.

STEP 4: Bake uncovered in a 400ยฐF oven for 22-25 minutes until the center reaches 140ยฐF. Remove from the oven and allow to rest for 10 minutes before slicing.
