    About This Recipe

Since I first started making oatmeal waffles/pancakes, I've been trying to convert everyone I know. I'm not a celiac or have gluten intolerance, but I just think they taste way better! Oatmeal also has much more fiber than flour, and has been linked to many health benefits, like lower cholesterol and helping regulate your blood sugar.

These oat waffles are sooo good. Super easy to make too. No need to whisk dry and wet ingredients in separate bowls. Just combine everything in a blender and blend until smooth. They come out super fluffy, tender, and crisp.

We love serving these with 100% real maple syrup and whipped cream. They also freeze great, so if you're looking to make your own healthy Eggos, this is the recipe for you.

    Key Ingredients

Oats: You can use either regular rolled oats or quick/instant oats. Both will work. Sometimes I have issues with digestion, so quick/instant oats are usually my go-to. They've already been steamed by the manufacturer so they cook fast.

Milk: I used cow's milk, but I have made this many times with milk alternatives like oat milk or almond milk. Comes out exactly the same.

Ripe bananas: It's best if these are very ripe because then you don't need to add any sugar. More bruises, the better.

Eggs: These help give the waffles structure.

Oil: You can also use melted butter in equal proportions.

Baking powder: This provides the leavening so they aren't dense.

Vanilla extract & cinnamon: These give the waffles a warm flavor.
