Add all the ingredients to a blender and blend until smooth, 30-60 seconds. Let the batter sit for 5 minutes to thicken. In the meantime, preheat your waffle iron.
Generously spray or brush the waffle iron with oil. Scoop in the batter (do not overfill), and cook until golden brown. Remove the waffle to a wire rack, then repeat with another waffle (don't forget to spray with more oil).
