    Focaccia Sandwich

    Focaccia Sandwiches are one of my favorite summer lunches. I love making them with farmer's market tomatoes, peppery arugula, fresh mozzarella, and some deli meat. This recipe will show you exactly how I make it every year!

    About This Recipe

    A freshly made focaccia sandwich is one of my favorite lunches during the summer- especially when tomatoes are at their peak! Every summer, my wife and I make it a weekend activity to visit our local farmer's market to pick up fresh tomatoes. We love eating them in sandwiches, salads, or just plain with some salt and pepper. But my favorite way is in a focaccia sandwich!

    The key to a good focaccia sandwich is all about the focaccia itself. You want something light, fluffy, crisp, and bubbly when you bite into it. If the focaccia is dense of bready, it won't be that good.

    I recommend going to a bakery that specializes in them to get the best ones. I was in a rush, so I just picked up some from Whole Foods for this post. But I will be honest, it wasn't the greatest focaccia... the ones from the bakery are way better. But it still made for a decent sandwich.

    Focaccia: Obviously, we will need some focaccia!

    Pesto: I love spreading pesto on both sides of the bread. I recommend splurging a bit here and getting a higher-quality brand. The quality of the pesto is much better for just a couple of extra dollars. Surprisingly, I find stores like T.J. Maxx have pretty good pesto.

    Fresh mozzarella: I used one ball of mozzarella for this sandwich that I sliced myself.

    Deli meat: You can use ANY deli meat that you like. Mortadella, salami, ham, pepperoni, etc, I used prosciutto today only because I had a bunch of leftovers.

    Tomato: High-quality, peak-of-the-season tomatoes are the best. That's why I usually make this sandwich in the summer.

    Arugula: I love the peppery flavor of arugula in a focaccia sandwich.

    Olive oil and balsamic glaze: For drizzling on the sandwich

    Salt and pepper: For sprinkling on the tomatoes.

    Instructions

    STEP 1: Slice the focaccia in half lengthwise, and spread the pesto on both sides.

    STEP 2: Add the mozzarella slices and deli meat.

    STEP 3: Add the arugula and tomatoes. Sprinkle salt and pepper on the tomatoes. Drizzle with balsamic glaze and olive oil.

    STEP 4: Combine the halves and then slice.

    Focaccia Sandwich

    This easy focaccia sandwich is one of my favorite summer lunches.

    Ingredients
      

    • 1 loaf focaccia (about 8x8 inches)
    • ยผ cup pesto
    • 6-8 slices fresh mozzarella
    • 6-8 slices any deli meat (turkey, ham, mortadella, salami, etc..)
    • 1 large tomato (sliced)
    • a handful of arugula
    • balsamic glaze (for drizzling)
    • olive oil (for drizzling)
    • salt and pepper (to taste)

    Instructions
     

    • Slice the focaccia in half lengthwise, and spread the pesto on both sides.
    • Add the mozzarella slices, then add your deli meat on top.
    • Add tomato slices and season with salt and pepper.
    • Drizzle with balsamic glaze and/or olive oil, then add a generous handful of arugula.
    • Bring the two focaccia halves together to make a sandwich. Slice into portions and enjoy!
