I recently made a Durian Cake for a dinner party and it was a huge hit with everyone. I do not know why but I have never seen a durian cake before so I wanted to try making one at home. The recipe is very simple and comes together in one hour. The smell of durian is quite strong so I recommend leaving a few windows open during baking.

I have never seen a plain durian cake before so I came up with this recipe. I am not much of a baker myself so I have intentionally made the recipe very simple. There are no complicated techniques like separating egg whites and egg yolks or having to gently fold ingredients together. All you need to do is combine the dry ingredients and wet ingredients separately then whisk them together.
The cake comes out very fluffy, moist, and it absolutely reeks of durian. I have made it a few times now and I am super happy with the taste and texture.

I am using a very standard cake recipe and adding durian puree to it. You will need cake flour, sugar, baking powder, salt, oil, milk, eggs, and vanilla extract. For the cake flour, you can substitute it with 2 cups of all-purpose flour and ¼ cup of cornstarch.
🎂 What Cake Pan to Use?
I recommend using a 9-inch round cake pan or two 6-inch round cake pans. This recipe makes about 5 cups of batter and those pans will be big enough to accommodate all the cake after it is done rising.
📖 My Method To Line A Cake Pan
This is my favorite way to line a cake pan. It is very easy after you have done it once. Basically, you just keep folding a piece of parchment paper until it resembles a small triangle, then trim it so that it is the length of the radius of the pan. Then you place it in the pan.
- Cut a piece of parchment slightly larger than the cake pan. Fold it in half from bottom to top. Then, fold it in half from left to right to get a square.
- Now, fold it again into a triangle, ensuring the creases are on one side and the loose edges are on the other side. Then, fold it into an even smaller triangle.
- Place the triangle's point in the center of the pan and trim the triangle about ¼-inch from the pan's edge.
- Finally, place it in the cake pan.

Before starting, preheat your oven to 350°F for at least 20 minutes, and line your cake pan with parchment paper.
STEP 1: In a large bowl, whisk together the cake flour, baking powder, and salt.
STEP 2: Using a food processor or blender, blend the durian meat and oil until smooth. Transfer the mixture to a medium bowl and whisk in the eggs, milk, sugar, and vanilla extract.
STEP 3: Pour the wet mixture into the bowl of dry ingredients and use a rubber spatula to mix until well combined.
STEP 4: Pour the batter into the prepared cake pan. Bake for 40-45 minutes, rotating the pan halfway through to ensure even cooking. The cake is done when a toothpick inserted in the center comes out clean. It is okay if the toothpick has some crumbs, but there should be no wet batter on it.
Transfer the cake to a wire rack, and let it cool in the pan for 30 minutes. Once the 30 minutes is up, use a thin knife to separate it from the sides of the pan and invert it onto a plate or cake tray. Remove the parchment paper and then cut it into pieces. Enjoy!
The cake stays fresh for up to five days in the fridge. Try to wrap it in plastic wrap so it does not absorb too many smells from the fridge.
