I recently made a Durian Cake for a dinner party and it was a huge hit with everyone. I do not know why but I have never seen a durian cake before so I wanted to try making one at home. The recipe is very simple and comes together in one hour. The smell of durian is quite strong so I recommend leaving a few windows open during baking.
Preheat your oven to 350°F and set the rack in the middle position. Line a 9-inch round cake pan or two 6-inch round cake pans with parchment paper. You can use the triangle technique from the blog post.
In a large bowl, whisk together the cake flour, baking powder, and salt.
Using a food processor or blender, blend the durian meat and oil until smooth. Transfer the mixture to a medium bowl and whisk in the eggs, milk, sugar, and vanilla extract.
Pour the wet mixture into the bowl of dry ingredients and use a rubber spatula to mix until well combined.
Pour the batter into the prepared cake pan. Bake for 40-45 minutes, rotating the pan halfway through to ensure even cooking. The cake is done when a toothpick inserted in the center comes out clean. It is okay if the toothpick has some crumbs, but there should be no wet batter on it.
Transfer the cake to a wire rack, and let it cool in the pan for 30 minutes. Once the 30 minutes is up, use a thin knife to separate it from the sides of the pan and invert it onto a plate or cake tray. Remove the parchment paper and then cut it into pieces. Enjoy! The cake will stay fresh in the fridge for up to 5 days.
