    Crack Corn Dip

    Creamy, cheesy, and completely addictive, this Crack Corn Dip recipe is beyond easy to make. This cold dip comes together in one bowl and is always a favorite at summer parties and potlucks.

    About This Recipe

    Once you bring this crack corn dip to a party, you'll be asked to make it every single time. I first made it for a summer potluck last year, and it was gone before the burgers were even ready (but to be fair, the burgers showed up 2 hours late lol). With just 8 ingredients, it couldn't be simpler to make. Creamy, cheesy, tangy, and just the right amount of zesty, it's the perfect dip for any occasion. I hope you love it as much as I do!

    Tips

    • Drain the canned vegetables thoroughly.ย This includes the canned tomatoes, chilis, and corn. It makes it so that the dip doesn't turn out too watery and runny. It makes a big difference, trust me.
    • Soften your cream cheese first.ย Cold cream cheese won't mix smoothly, and you'll end up with lumps throughout the dip if you don't soften it. Set it out on the counter for about 30 minutes before you start, and it'll blend right in. Or if you forgot to set it out, use a hand mixer to beat the cream cheese for 1 minute.

    Mexican-style corn: This is a special style of canned corn you can buy at most grocery stores. The seasoning adds a ton of flavor, which saves us a lot of time!

    Rotel diced tomatoes: These have a bit of chiles mixed with the tomatoes for more flavor.

    Mild green chiles: In addition to the chiles in the Rotel tomatoes, I like to add some extra chiles for more heat and flavor! You can swap this for freshly chopped jalapenos as well.

    Ranch dressing mix: My secret weapon for quick and easy flavor! One packet gives the entire dip a strong, ranchy, herby flavor.

    Cheddar cheese: Use old or medium cheddar for that extra sharp flavor.

    Sour cream: I recommend full-fat sour cream because it gives the creamiest result. Lower-fat sour cream works in a pinch, but it'll be slightly more runny.

    Cream cheese: Leave your cream cheese on the counter for 30 minutes to soften so it's easier to mix with the other ingredients.

    Green onions: Add a mild oniony flavor. Save a little extra to scatter on top before serving!

    STEP 1: To a large bowl, mix together the cream cheese, sour cream, and ranch dressing mix.

    STEP 2: Add the rest of the ingredients to the bowl and mix until well combined. Refrigerate for at least an hour or overnight. Serve with your favorite chips like Fritos!

    Ingredients
      

    • 8 ounces cream cheese (softened)
    • 1 cup sour cream
    • 1 (1-ounce) package ranch dressing mix
    • 3 (11-ounce) cans Mexican-style corn (drained)
    • 1 (10-ounce) can Rotel diced tomatoes (drained)
    • 2 (4-ounce) cans mild green chiles (drained)
    • 2 cups shredded cheddar cheese
    • ยฝ cup chopped green onions

    Instructions
     

    • To a large bowl, mix together the cream cheese, sour cream, and ranch dressing mix.
    • Add the rest of the ingredients to the bowl and mix until well combined.
    • Refrigerate for at least an hour or overnight. Serve with your favorite chips like Fritos!

    Notes

    For a hot version, top with cheddar cheese and bake in a 350F oven for 18-20 minutes until hot and bubbly.
