    Cottage Cheese Waffles

    These Cottage Cheese Waffles are soft, fluffy, and easy to make. With approximately 20g of protein per waffle, they'll surely help you hit all your protein goals!

    About This Recipe

    Try these cottage cheese waffles next time you're looking for a high-protein breakfast! Back in my 20's, I had a few "gym rat" eras- lifting weights 3-4 times a week, tracking my macros, and of course packing in as much protein as possible. One of my favorite protein hacks was these cottage cheese waffles. They're so easy to make and taste absolutely delicious. I find a lot of protein recipes to be...pretty nasty, but these ones are genuinely tasty.

    They're the perfect combination of sweet and savory. You can eat them like any other waffle. Serve your favorite toppings, like syrup, whipped cream, jam, or berries, or even sandwich a slice of chicken between them for something savory.

    What I especially love about these waffles is that the cottage cheese caramelizes to form these dark brown bits on the outside. They add lots of savory depth and also crisp up nicely.

    Key Ingredients

    Cottage cheese: Of course, we will need some cottage cheese. Whole milk cottage cheese will give you the richest flavor and texture, but feel free to go with a lower percentage if you want less fat.

    All-purpose flour: Make sure to measure your flour by gently spooning it into your measuring cup and leveling the top with a knife. This will ensure you do not overmeasure your flour.

    Baking powder: Makes the waffles light and fluffy

    Eggs: Essential for the structure of waffles. And they add lots of protein.

    Vegetable oil: To give moistness to the waffles. You can also use melted butter.

    Milk: We need a little bit of milk to make the batter.

    Maple syrup: For natural sweetness! You can also use honey or regular sugar.

    Vanilla extract: For warm flavor.

    STEP 1: In a large bowl, whisk together the flour and baking powder.

    STEP 2: In a medium bowl, whisk together the cottage cheese, eggs, oil, milk, maple syrup, and vanilla extract.

    STEP 3: Pour the wet ingredients into the dry ingredients and whisk until JUST combined.

    STEP 4: Spray the waffle iron with oil. Scoop about ยพ cup of batter into the iron.

    STEP 5: Close and cook until golden brown. Remove the waffle. Spray the waffle iron with more oil and repeat.

    Ingredients
      

    • 1 ยผ cups all-purpose flour (spooned and levelled)
    • 1 teaspoon baking powder
    • 1 cup cottage cheese
    • 3 large eggs
    • 3 tablespoons vegetable oil
    • 3 tablespoons milk
    • 2 tablespoons maple syrup
    • 2 teaspoons vanilla extract

    Instructions
     

    • Start by preheating your waffle iron.
    • In a large bowl, whisk together the flour and baking powder.
    • In a medium bowl, whisk together the cottage cheese, eggs, oil, milk, maple syrup, and vanilla extract.
    • Pour the wet ingredients into the dry ingredients and whisk until JUST combined.
    • Spray the waffle iron with oil. Scoop about ยพ cup of batter into the iron. Close and cook until golden brown. Remove the waffle.
    • Spray the waffle iron with more oil and repeat.
