Start by preheating your waffle iron.
In a large bowl, whisk together the flour and baking powder.
In a medium bowl, whisk together the cottage cheese, eggs, oil, milk, maple syrup, and vanilla extract.
Pour the wet ingredients into the dry ingredients and whisk until JUST combined.
Spray the waffle iron with oil. Scoop about ¾ cup of batter into the iron. Close and cook until golden brown. Remove the waffle.
Spray the waffle iron with more oil and repeat.
