This baked oatmeal cup recipe is loaded with heart-healthy oats and easily customizable with different toppings. As you can see from the photo above, I made raspberry, blueberry, banana, and sliced almond versions. These oatmeal cups can be stored in the fridge all week for a quick breakfast or snack, or even frozen for several months.
I love how healthy this recipe is. Oats are one of the most nutritious foods you can eat. They're loaded with fiber, protein, and various essential minerals. Also, they're one of the few foods shown to lower bad cholesterol when eaten regularly.
I've also chosen to sweeten these oatmeal cups naturally with maple syrup. You can also use honey, agave nectar, brown sugar, or your sweetener of choice.
Key Ingredients

Rolled oats: Old-fashioned rolled oats are the best choice for making baked oatmeal because they hold their shape well and stay nice and chewy after baking. Steel-cut oats don't absorb liquid well enough, and instant oats would become too mushy; avoid both for this recipe.
Milk: You can use your favorite type of milk! Both dairy and non-dairy milk will work. You can also use water, but it won't have the same creamy consistency.
Eggs: Eggs give the oatmeal structure so that they bake into the perfect cups.

Instructions

STEP 1: In a large bowl, whisk all of the ingredients together.

STEP 2: Divide the batter between all the muffin cups, filling right to the top. The oats and liquid won't be fully combined, so try to get an even amount of oats and liquid in each cup.

STEP 3: Sprinkle with your desired toppings. Try sliced strawberries, whole raspberries, slivered almonds, diced apples, or bananas!

STEP 4: Bake for 30 minutes, or until the edges are lightly browned. Cool for 5 minutes before serving, as the oatmeal will continue to set outside of the oven. Enjoy!

Ingredients
- 2 ยฝ cups rolled oats
- 1 โ cups milk
- 2 large eggs
- ยฝ cup maple syrup
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
Toppings of choice
- berries, apples, bananas, nuts, sugar, etc.
Instructions
- Preheat your oven to 350ยฐF. Generously spray a 12-cup muffin pan with nonstick spray. If you're using muffin liners, spray the liners too so nothing sticks.
- In a large bowl, whisk all of the ingredients together. Divide the batter between all the muffin cups. The oats and liquid won't be fully combined, so try to get an even amount of oats and liquid in each cup.
- Sprinkle desired toppings.
- Bake for 30 minutes, or until the edges are lightly browned. Cool for 5 minutes before serving. Enjoy!
