These Air Fryer Zucchini Chips are one of my favorite guilt-free snacks! They come out just as crispy as the deep-fried ones and have the same great flavors. I served mine with some store-bought sour cream and onion dip, but feel free to serve them with whatever you like. Or eat them plain!

About This Recipe
I looove zucchini chips! They are so crispy, and they feel somewhat healthy because they're made of zucchini. A lot of people like to bake them, but I much prefer air-frying them. Maybe it's just me, but whenever I bake them, they never actually get crispy.
Airfrying is totally different, though! The zucchini chips come out super crisp and golden brown. We coat them with panko breadcrumbs and parmesan. The breadcrumbs add an excellent crunch, while the parmesan adds delicious flavor.

I love to serve zucchini chips with a creamy dip. My go-to is sour cream and onion dip, but this would go well with ranch, garlic aioli, or something similar. You can also eat them plain if you're looking for something healthier. They already have enough flavor as is!
Key Ingredients
Zucchini: I used one medium-sized zucchini. I prefer to cut them into ⅓-inch thick pieces, slightly larger than what most recipes do. I feel like you don't get enough zucchini when you cut them too small. Plus, zucchini shrinks a bit while cooking, so they become more like ¼-inch after air-frying.
Panko breadcrumbs: These are what provide the crunchy texture! If you see a zucchini chip recipe that doesn't have panko breadcrumbs, it won't be crispy!
Parmesan: I used the Kraft brand of grated parmesan. I think real parmesan would be infinitely tastier, though.
Eggs: For coating the zucchini slices so that the breadcrumbs stick.
Flour: Flour is for thickening the egg wash. It helps the breadcrumbs stick more easily.
Salt and pepper: To taste.
Instructions
STEP 1: In a shallow dish, combine the panko breadcrumbs and parmesan cheese.
STEP 2: In another shallow dish, whisk together the eggs, flour, salt, and pepper. The consistency should be like pancake batter. If it's too thick, add a tiny bit of water.
STEP 3: Dip a zucchini slice in the egg wash and shake off the excess (I tap the zucchini on the side of the dish to get off the excess).
STEP 4: Coat in breadcrumbs.
STEP 5: Arrange the zucchini in an air fryer basket and spray the tops with oil. Make sure to leave some space between each one so that air can circulate.
STEP 6: Air-fry at 400°F for 5-7 minutes, flip, spray with more oil, and air-fry for another 5-7 minutes until golden brown and crispy. Enjoy!

Ingredients
- 2 large eggs
- 3 tablespoons flour
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¾ cup panko breadcrumbs
- ¼ cup grated parmesan cheese
- 1 large zucchini (sliced ⅓-inch thick)
Instructions
- In a shallow dish, whisk together the eggs, flour, salt, and black pepper.
- In another shallow dish, mix together the breadcrumbs and parmesan cheese.
- Dip each zucchini slice in the egg mixture, then press it into the breadcrumbs and cheese. Place on a baking sheet.
- Preheat your air fryer to 400°F. Arrange half the zucchini slices in a single layer, leaving a little bit of space between each one. Spray with oil and air-fry for 5-7 minutes. Flip, spray with more oil, and air-fry for another 5-7 minutes until golden brown and crispy. Repeat with the remaining half. Enjoy!
