  • In a shallow dish, whisk together the eggs, flour, salt, and black pepper.
  • In another shallow dish, mix together the breadcrumbs and parmesan cheese.
  • Dip each zucchini slice in the egg mixture, then press it into the breadcrumbs and cheese. Place on a baking sheet.
  • Preheat your air fryer to 400°F. Arrange half the zucchini slices in a single layer, leaving a little bit of space between each one. Spray with oil and air-fry for 5-7 minutes. Flip, spray with more oil, and air-fry for another 5-7 minutes until golden brown and crispy. Repeat with the remaining half. Enjoy!
