These easy-to-make roasted sweet potatoes are beautifully caramelized on the outside. In my opinion, they taste like sweet potato fries but in cube form.
Peel and cut the sweet potatoes into 1 ½-inch cubes. Transfer to a large bowl.
Add the olive oil, salt, and black pepper, and toss to coat evenly.
Spread the sweet potatoes in a single layer on a baking sheet. Bake for 15 minutes. Flip, and continue baking for another 18-20 minutes until lightly browned and caramelized. Enjoy!
