    Roasted Sweet Potatoes

    These Roasted Sweet Potatoes are beautifully caramelized on the outside and have soft and tender insides. A simple seasoning of olive oil, salt, and black pepper brings out their natural sweetness while the oven works its magic.

    About This Recipe

    Sweet Potatoes are one of my favorite vegetables to roast. The reason is that they contain a lot of natural sugars, which caramelize in the oven and develop extremely complex flavors. The downside is that because of this extra sugar, they can burn much easier.

    When roasting sweet potatoes, it's important not to cook them for too long. I usually bake them for about 35-40 minutes maximum at 425ยฐF. The difference between caramelized and burnt can be as little as 5 minutes.

    When sweet potatoes are roasted perfectly, they should be lightly browned on the outside and fully cooked through the middle. Some sugar will leak out while cooking and, after resting for a bit, should harden to form some crispy bits on the bottom!

    Sweet potatoes: This recipe will work with orange-colored sweet potatoes or white-colored sweet potatoes. I've made it with both.

    Olive oil: I used extra virgin olive oil. Make sure to coat each piece of sweet potato evenly so that they get an even browning.

    Salt: I used coarse kosher salt.

    Black pepper: Freshly cracked for the best flavor.

    STEP 1: Peel and cut the sweet potatoes into 1 ยฝ-inch cubes.

    STEP 2: Transfer the sweet potatoes to a large bowl. Toss with olive oil, black pepper, and salt.

    STEP 3: Spread the sweet potatoes in a single layer on a large baking sheet.

    STEP 4: Bake at 425ยฐF for 15 minutes. Flip, then bake for another 18-20 minutes. Notice that the side of the sweet potato that touches the pan is where the browning happens!

    Eat these roasted sweet potatoes immediately for the best taste!

    Roasted Sweet Potatoes

    These easy-to-make roasted sweet potatoes are beautifully caramelized on the outside. In my opinion, they taste like sweet potato fries but in cube form.

    Ingredients
      

    • 2 pounds sweet potatoes (about 4-5 medium)
    • 3 tablespoons extra virgin olive oil
    • ยฝ teaspoon salt
    • ยฝ teaspoon ground black pepper

    Instructions
     

    • Preheat your oven to 425ยฐF.
    • Peel and cut the sweet potatoes into 1 ยฝ-inch cubes. Transfer to a large bowl.
    • Add the olive oil, salt, and black pepper, and toss to coat evenly.
    • Spread the sweet potatoes in a single layer on a baking sheet. Bake for 15 minutes. Flip, and continue baking for another 18-20 minutes until lightly browned and caramelized. Enjoy!
