This quick and easy peanut noodles are one of my favorite easy weeknight meals when I have no groceries at home. It's creamy, savory, a little sweet, and very delicious.
Bring a pot of salted water to a boil. Cook the noodles according to the package directions. Drain and set aside.
In a medium bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, and grated ginger. Add 4 tablespoons of water and whisk until smooth. If the sauce is too thick, add more water, 1 tablespoon at a time, until it's creamy and loose.
Divide the noodles and sauce into 2 bowls. Top each bowl with chopped cilantro, green onions, peanuts, and a drizzle of chili oil. Enjoy!
