    Peanut Butter Noodles

    These creamy Peanut Butter Noodles are easy to make using my signature peanut sauce. Ready in only 10 minutes, it's perfect for an easy weeknight meal. A variety of toppings like fresh cilantro, green onions, and chopped peanuts take it to the next level!

    About This Recipe

    Whenever I need a quick meal with basically no groceries or planning, I come to this recipe. It's easy to make, ready in 15 minutes, and incredibly delicious relative to the amount of work involved.

    The first time I had peanut noodles, it was just plain noodles and sauce. And if I'm being honest, it was kind of boring- it left a bad impression on me for the longest time. It wasn't until my wife ordered it at a restaurant that I realized it could be so much better. The restaurant version came with a bunch of toppings like cilantro and peanuts, and it made it infinitely better.

    For my recipe, I pretty much copied the restaurant, but with a few more additions. I add cilantro, green onions, chopped peanuts, and a drizzle of chili oil. The chili oil is totally optional, but it's really tasty. I don't always add it. I'm actually recovering from a bad sore throat right now, so I skipped it for this meal (but I added it for my wife).

    Key Ingredients

    Peanut sauce: For the sauce, you'll need peanut butter, soy sauce, honey, rice vinegar, toasted sesame oil, ginger, and water.

    Noodles: My favorite noodles to use are thicker wheat noodles, especially the Korean brands, which you can find in the refrigerated section of some Asian grocery stores.

    Toppings: I recommend cilantro, green onions, chopped peanuts, and chili oil.

    STEP 1: Bring a pot of salted water to a boil. Cook the noodles according to the package directions. Drain and set aside.

    STEP 2: In a medium bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, and grated ginger.

    STEP 3: Add 4 tablespoons of water and whisk until smooth. If the sauce is too thick, add more water, 1 tablespoon at a time, until it's creamy and loose.

    STEP 4: Divide the noodles and sauce into 2 bowls. Top each bowl with chopped cilantro, green onions, peanuts, and a drizzle of chili oil. Enjoy!

    Peanut Butter Noodles

    This quick and easy peanut noodles are one of my favorite easy weeknight meals when I have no groceries at home. It's creamy, savory, a little sweet, and very delicious.

    Ingredients
      

    For the peanut sauce

    • ยฝ cup peanut butter
    • 3 tablespoons soy sauce
    • 2 tablespoons honey (or maple syrup)
    • 2 tablespoons rice vinegar (or fresh lime juice)
    • 1 tablespoon toasted sesame oil
    • 1 teaspoon freshly grated ginger
    • 4 to 6 tablespoons water (as needed)

    For the noodles

    • 12 ounces wheat noodles
    • chopped cilantro
    • chopped green onions
    • chopped peanuts
    • chili oil

    Instructions
     

    • Bring a pot of salted water to a boil. Cook the noodles according to the package directions. Drain and set aside.
