These peanut butter cookies are soft and chewy on the inside and crisp and crumbly on the edges. I learned this recipe from a friend's mom growing up, and it's still one of my favorite cookie recipes!
In a stand mixer fitted with the paddle attachment, cream together the peanut butter, butter, brown sugar, sugar, vanilla extract, and baking powder on medium speed until the mixture is light and fluffy, about 3 minutes.
Add the egg and mix until incorporated. Reduce the speed to low and mix in the flour until a soft dough forms.
Roll the dough into 1 inch balls and arrange them on a parchment lined baking sheet
Use a fork to press a criss cross pattern on them.
Bake for 10-12 minutes until the edges are firm and the tops are no longer glossy.
