    Peanut Butter Cookies

    These Peanut Butter Cookies are soft and chewy on the inside with crisp and crumbly edges. They're easy to make and come out perfect every time! This is a recipe I got from a friend's mom growing up, and it's still one of my favorite cookie recipes!

    About This Recipe

    This might be an unpopular opinion, but I think peanut butter cookies are the best cookies in the world. I know a lot of you like your chocolate chip and sugar cookies, but nothing beats the sweet and salty taste of a peanut butter cookie. And if you asked my dog, I bet he would agree too (he loves peanut butter).

    I learned this recipe a long time ago from one of my childhood friends' mom. She used to make the best peanut butter cookies. Apparently, she found the recipe on the back of a peanut butter container. Her cookies were so good I remember I would always sneak one when I went to their house.

    These cookies are everything a peanut butter cookie should be. They're dense and chewy on the inside. Crisp and crumbly on the edges. And they're incredibly easy to make.

    Key Ingredients

    Peanut butter: For the best peanut butter cookies, I highly recommend using processed peanut butter. Brands like Jif or Skippy. The cookies come out much creamier than if you use organic peanut butter.

    Dry ingredients: You will need all-purpose flour, baking powder, sugar, and brown sugar. I like using a mixture of both sugars to get the perfect balance of textures. The brown sugar gives it a chewier texture, while the white sugar makes it softer.

    Butter: I tested this recipe with unsalted butter but I think salted butter should work as well.

    Eggs: There's not much to say here, but you'll need one egg to help bind everything together.

    STEP 1: In a stand mixer, cream together the peanut butter, butter, sugars, vanilla extract, and baking powder until thick and fluffy. We are trying to beat air into the mixture so that the cookies do not deflate while baking.

    STEP 2: Mix in the egg, followed by the flour until a soft dough forms.

    STEP 3: Roll the dough into balls and transfer to a baking sheet. Use a fork to flatten them and make a crisis cross pattern on the top.

    STEP 4: Bake for 10-12 minutes until the edges are firm and the tops are no longer glossy.

    Ingredients
      

    • 1 cup peanut butter
    • ยฝ cup butter (room temperature)
    • ยฝ cup brown sugar
    • ยฝ cup sugar
    • 1 teaspoon vanilla extract
    • ยพ teaspoon baking powder
    • 1 large egg
    • 1 ยฝ cups all-purpose flour

    Instructions
     

    • Preheat your oven to 350ยฐF.ย 
    • In a stand mixer fitted with the paddle attachment, cream together the peanut butter, butter, brown sugar, sugar, vanilla extract, and baking powder on medium speed until the mixture is light and fluffy, about 3 minutes.
    • Add the egg and mix until incorporated. Reduce the speed to low and mix in the flour until a soft dough forms.
    • Roll the dough into 1 inch balls and arrange them on a parchment lined baking sheet
    • Use a fork to press a criss cross pattern on them.
    • Bake for 10-12 minutes until the edges are firm and the tops are no longer glossy.
