Heat the olive oil in a large pot over medium heat. Cook the onions, garlic, and celery for 4-5 minutes until softened.
Stir in the flour until evenly mixed throughout. While stirring constantly, pour in the chicken stock. Add the chicken breast, Italian seasoning, and thyme, and bring to a boil. Reduce to a simmer, then stir in the gnocchi. Cook for 3-4 minutes until the gnocchi is cooked through.
Stir in the carrots, spinach, and heavy cream. Bring to a gentle simmer and cook for another 1-2 minutes. Season to taste with salt and pepper. Enjoy!
