    Olive Garden Chicken Gnocchi Soup

    This copycat Chicken Gnocchi Soup from Olive Garden is easy to make and tastes even better than the original. It's creamy, rich, and so delicious!

    About This Recipe

    If you had asked me yesterday morning what my favorite soup at Olive Garden was, my immediate answer would have been their Zuppa Toscana soup. I've been a sucker for it ever since I had it a few years ago. I make it at home now, and honestly, I think my version is even better.

    Well... everything changed last night. Yesterday, my wife and some friends went Christmas shopping, and we decided to grab dinner at Olive Garden after.

    When I like something, I usually stick to that. So as usual, I got my Zuppa Toscana. But our waiter accidentally brought me the chicken gnocchi soup instead. He apologized and said he'd get me my right soup, but said I could have the Chicken Gnocchi anyway (hurray for unlimited soups!). And wow.. it was so delicious! Creamy, rich, and perfect for a cold night. I even dipped my breadsticks in it.

    I knew that I would be spending the next day replicating the soup. My recipe is incredibly easy to make in 30 minutes, and it's even better than Olive Garden. I hate making gnocchi from scratch, so I just bought some from the grocery store, but everything else is homemade.

    Key Ingredients

    Olive oil: For sauteeing the vegetables. You can also use butter, but I like olive oil because it's healthier. You need 4 tablespoons for the recipe, which might seem like a lot, but we need enough to coat the flour particles.

    Flour: Olive Garden's soup is quite thick, so we need some flour to thicken ours.

    Chicken broth: The base of the soup is made with chicken broth. I use Campbell's "no salt added" chicken broth so I can adjust the saltiness to my liking.

    Vegetables: Onions, garlic, celery, carrots, and spinach.

    Seasonings: Italian seasoning, dried thyme, salt, and pepper.

    Chicken breasts: You can either use precooked or raw. If you use raw, you can add the chicken with the stock and cook it for an extra 3 minutes before adding the gnocchi.

    Heavy cream: For that rich, luxurious flavor!

    STEP 1: Heat the olive oil in a large pot over medium heat. Cook the onions, garlic, and celery for 4-5 minutes until softened.

    STEP 2: Stir in the flour until evenly mixed throughout.

    STEP 3: While stirring constantly, pour in the chicken stock. Add the chicken breast, Italian seasoning, and thyme, and bring to a boil. Reduce to a simmer, then stir in the gnocchi. Cook for 3-4 minutes until the gnocchi is cooked through.

    STEP 4: Stir in the carrots, spinach, and heavy cream. Bring to a gentle simmer and cook for another 1-2 minutes. Season to taste with salt and pepper. Enjoy!

    Ingredients
      

    • 4 tablespoons olive oil
    • 1 medium onion (diced)
    • 3 cloves garlic (minced)
    • 2 ribs celery (diced)
    • โ…“ cup all-purpose flour
    • 5 cups chicken broth
    • 1 large chicken breast (diced)
    • 1 teaspoon Italian seasoning
    • ยผ teaspoon dried thyme
    • 1 (16-ounce) package gnocchi
    • 1 cup carrots (shredded)
    • 1 cup spinach leaves
    • 1 cup heavy cream
    • salt and pepper (to taste)

    Instructions
     

    • Heat the olive oil in a large pot over medium heat. Cook the onions, garlic, and celery for 4-5 minutes until softened.
    • Stir in the flour until evenly mixed throughout. While stirring constantly, pour in the chicken stock. Add the chicken breast, Italian seasoning, and thyme, and bring to a boil. Reduce to a simmer, then stir in the gnocchi. Cook for 3-4 minutes until the gnocchi is cooked through.
    • Stir in the carrots, spinach, and heavy cream. Bring to a gentle simmer and cook for another 1-2 minutes. Season to taste with salt and pepper. Enjoy!
