Bring a medium pot of water to a boil and cook the egg noodles according to the package directions. Drain and set aside.
Heat the oil in a large skillet over medium-high heat. Brown the beef, onions, and garlic for 6-7 minutes until the beef is no longer pink.
Stir in the flour and mix until combined.
Add the beef broth, Worcestershire sauce, and dried thyme, and bring to a simmer. Reduce the heat to low and let it simmer for 5 minutes.
Remove from the heat and stir in the sour cream. Season to taste with salt and black pepper. Serve over the noodles and enjoy!
