Place a 9 or 10-inch cast iron pan in the oven and preheat to 425°F.
In a large bowl, whisk together the flour, milk, eggs, sugar, and vanilla until smooth.
When the pan is hot, add the butter and swirl it around to coat the sides.
Pour the batter into the center of the pan. No need to stir the batter. Bake for 14-16 minutes until puffed and golden brown.
