This impressive-looking (and delicious) Dutch Baby pancake is baked in a hot cast-iron skillet. You only need a few simple kitchen staples, and it comes out light, puffy, and buttery.

  • Place a 9 or 10-inch cast iron pan in the oven and preheat to 425°F.
  • In a large bowl, whisk together the flour, milk, eggs, sugar, and vanilla until smooth.
  • When the pan is hot, add the butter and swirl it around to coat the sides.
  • Pour the batter into the center of the pan. No need to stir the batter. Bake for 14-16 minutes until puffed and golden brown.
