    About This Recipe

    Ok, first off, what the heck is a Dutch baby? If you've never heard of it before, the name doesn't exactly give it away. It's essentially a type of pancake baked in a hot skillet. Popularized in Manca's Cafe in Seattle, Washington, it's a cross between a crepe and a Yorkshire pudding. The batter is similar to a crepe batter, more on the eggy side, and then as it bakes, it rises dramatically like a Yorkshire pudding. The result is light, puffy, and buttery.

    Even though it looks really fancy, it's actually really easy to make. All you do is mix the batter ingredients in a bowl, then pour them into a preheated cast-iron skillet and bake for around 15 minutes. The key is really to preheat your cast-iron skillet. This gets it hot enough that when the batter hits the pan, it starts cooking right away, and the steam helps it rise quickly.

    I love serving this with fresh berries (raspberries and blackberries are my favorites), maple syrup, and a light sprinkle of powdered sugar. If you're looking for something to impress guests, this is it!

    Flour: All-purpose flour is all you need to make the perfect Dutch baby. Cake flour is a bit too delicate, so the pancake won't rise as high, and bread flour would make the pancake too chewy and dense.

    Milk: Any type of milk will work for this recipe. I use whole milk, but you can use any type of milk or even nondairy milk like almond or oat.

    Eggs: Eggs act as a binder for all the ingredients, while also providing structure to the pancake.

    Sugar: A bit of sugar provides sweetness and enhances the browning. You can substitute this with natural sugar like maple syrup or honey if you like.

    Vanilla extract: For warm, cozy flavor.

    Butter: This helps prevent the pancake from sticking to the pan and gives it nice crisp edges!

    STEP 1: In a large bowl, whisk together the flour, milk, eggs, sugar, and vanilla until smooth. You can also do this in a high-speed blender.

    STEP 2: Place a 9 or 10-inch cast-iron pan in the oven and preheat to 425ยฐF. When the pan is hot, add the butter and swirl it around to coat the sides.

    STEP 3: Pour the batter into the center of the pan. No need to stir the batter.

    STEP 4: Bake for 14-16 minutes until puffed and golden brown. Make sure you don't open the oven door during this time, or else the Dutch baby pancake won't come out as high.
