Cucumber Sandwiches

These Cucumber Sandwiches have fresh cucumbers and a herby cream cheese sandwiched between two pieces of soft, white bread. They're the perfect summer snack and super simple to make.

Instructions

  • In a small bowl, mash together the cream cheese and mayonnaise until smooth. Stir in the dill, garlic, black pepper, and salt.
  • To make a sandwich, spread a thin layer of the cream cheese on two slices of bread. Add as many cucumber slices as you like (I used two layers). Put the slices together to make a sandwich. Remove the crusts if desired.
  • Slice the sandwich in half or into three smaller pieces.
  • Serve immediately, or wrap individually with plastic wrap and store in the fridge.
