About This Recipe
My wife and I have been eating a lot of heavy foods recently, like beef stroganoff, crab casserole, and sloppy joes, so she suggested we go on a "cleanse" this weekend. I got the idea to make these cucumber sandwiches. They're light and refreshing, meat-free, and you can fill them with as many cucumbers as you like.
This cucumber sandwich recipe is one of the simplest summer dishes, and if you ask me, it's also one of the best. They're super easy to make in just three steps. All you do is make a herby cream cheese, slice some cucumbers, then put everything together between two slices of bread.
These would go great in a picnic basket or as an appetizer for an event like a bridal shower.
Key Ingredients
White bread: I'm using white Wonder bread. I really like using simple, soft white breads for this because they are very airy and light, and they complement the cucumbers well.
Cucumbers: Of course, we need cucumbers! I like using English cucumbers because the seeds are small, and you can barely tell they are there.
Cream cheese: I'm using full-fat Philadelphia brand cream cheese today, but feel free to use a lighter version. I suppose if you were lazy, you could also buy the herbed version and just use that instead of making your own herbed cream cheese.
Mayonnaise: Mayonnaise helps lighten the texture of the cream cheese, so it's not as dense. Plus, it tastes great.
Dill: For this recipe, I actually used dried dill instead of fresh dill. Surprisingly, it tastes just as fresh as the dried one to me.

Cucumber Sandwiches
Ingredients
- 4 ounces cream cheese
- 1 ½ tablespoons mayonnaise
- 2 teaspoons chopped fresh dill (or 1 teaspoon dried)
- ½ clove garlic (minced)
- ½ teaspoon black pepper
- ¼ teaspoon salt
- 1 English cucumber (sliced)
- 8 slices white bread
Instructions
- In a small bowl, mash together the cream cheese and mayonnaise until smooth. Stir in the dill, garlic, black pepper, and salt.
- To make a sandwich, spread a thin layer of the cream cheese on two slices of bread. Add as many cucumber slices as you like (I used two layers). Put the slices together to make a sandwich. Remove the crusts if desired.
- Slice the sandwich in half or into three smaller pieces.
- Serve immediately, or wrap individually with plastic wrap and store in the fridge.
